EASY SEARED SCALLOPS RECIPE

Searing scallops might seem intimidating, but it's insanely easy to do at home. Here's how to do it perfectly every time.

·         REMOVE THE SIDE MUSCLES.
Though they're completely edible, they're chewy and unpleasant in texture. To remove it, simply pinch and peel it off with your hands.
·         PAT THEM DRY.
To get a nice crust, they must be as dry as possible. Otherwise, they'll steam! Even if they look pretty dry already, blot them with a paper towel anyways. Seriously.
·         GET THE SKILLET HOT.
It's hot enough when the oil is shimmering and it's JUST starting to smoke.
·         MAKE AN EASY PAN SAUCE.
And by easy, we mean melt some butter in the skillet, throw in some herbs and stir in some lemon juice. It's easy as hell, and it's insanely delicious.
